Similar to Mossmother Cavern but I think a bit nicer is Shadowgreen Cavern North of Solitude. One of the more overlooked locations. Only one quest that I know of brings you there.

I bought it twice, but I could never get into it until I played it in VR (the third time I bought it, haha). It's my favorite VR game. The mods are fantastic too. What did you end up deciding on?

Well, the game was originally conceived as a non-VR game, so I would recommend the regular version to begin with, then upgrade to VR once you got the hang of it.

Thought of it while watching the video, is there a mod that removes all enemies (or a way for them not to attack) so you can just do the tourist thing? Reason being would love to show friends some of these sights (and more) but getting attacked while checking out the view might put a damper on the vacation to Skyrim vibe.

You can do that with the console commands, if you have access to them. If you press the tilde key then type 'TCAI' it turns off the combat AI.

Only with mods that compliment the game. Half the popular mods, whilst high res, don't suit the theme.

my favorite spot in skyrim is when I use my infinite roll Logi mouse wheel to scroll down the 200 items in my inventory now that's a sight to see ;)
